Ingredients
- 275 grams Energy Chocolate, roughly chopped
- 250 grams unsalted butter
- 6 eggs, at room temperature
- 2 cups brown sugar
- 1 cup flour
Method
- Melt the chocolate and butter in the top pan of a double boiler over simmering water. Remove from the heat and allow to cool.
- In a clean bowl beat the eggs and sugar together until they are light and fluffy. Fold the cooled chocolate and sifted flour into the egg mixture.
- Pour into a well-greased, floured and lined 23cm square cake tin. Bake at 180 degrees Celcius for 35 - 40 minutes. The cake should still be moist in the middle. Allow to cool completely on a cake rack before turning out.
- Cut into small squares to serve and dust with icing sugar. Makes a large number as it is rich and delicious.
Tip: Line the cake tin with baking paper that comes up the sides so that you can pull on the baking paper to remove the cake from the tin.
